Cheesecake Cupcakes (Easy, Healthy and Delicious!)
I have been on a quest to find a fantastic cheesecake recipe that would be great to eat in the summer months with some fresh fruit but not kill the waistline for my clients and myself. I came upon a recipe in Diabetes and You Magazine, Summer 2008 and then I took the liberty of modifying it so it was portion controlled and a tad tastier.
