Rachel Ray may have made EVOO (extra virgin olive oil) famous here in the states, but the product has a long and rich history as a staple in many Mediterranean diets.  But, besides being versatile, useful and delicious, does it have any health benefits?

Studies indicate that a tablespoon of extra virgin olive oil each day will help protect

against heart disease and cancer because it is full of antioxidants.  Sure, olive oil is high in calories and fat, but it contains the good fat that helps your body absorb all of the nutrients from your salad or pasta dish.  It can also help make you feel fuller.  Just so you know, the word “extra” means that it has less acidity than regular virgin olive oil.

Keep in mind that oils that come from different regions will have different tastes, so you may need to experiment  in order to find your personal favorite.
