I’ve been noticing recently that there’s been a lot of badmouthing when it comes to cheese.  I think this is primarily because cheese has been extremely overused, and that its benefits have been greatly under-appreciated.

Consider this: How often, when dining out, is cheese part of the dish or used as a garnish?  Oftentimes, this just results in unnecessary calories.  However, if you pair a good cheese with some wine and add some nuts or fruit, then you’re really on to something!

Not only does it taste good, but it’s also not that bad for you.  Depending on the cheese, the average one inch cube is around 70 calories.  It’s rich in protein, calcium and other nutrients as well.  For best results, serve it at room temperature and do not devour it in large quantities!

I think if you’re going to have cheese, it should be enjoyed.  So have a couple of cubes and savor it, and then skip out of adding it to your soup, salad or sandwich.  If you still feel the need to add cheese to everything, then pick one that’s potent so you can use less of it. Another great tip is to use a grater and shred the cheese because a little bit gives a big effect!
