Are blue corn tortilla chips really any better than the standard white corn tortilla chips? Yes, according to WebMD. Apparently the blue corn tortilla chips have more protein, less starch and a lower glycemic index.
The benefits of more protein and less starch are pretty obvious, but you may be wondering about the importance of the glycemic index (or GI). When a food has a lower GI, the sugar it contains is absorbed into the blood stream at a slower rate. Because of this, you’ll experience a more gradual increase in blood sugar levels and avoid spikes and crashes.
Although the nutritional differences between blue and white tortilla chips aren’t overwhelming, it certainly can’t hurt to make the switch!
