EDAMAME BEANS
I’ve been noticing that edamame is being added into a lot of stir-fries and salads lately. Obviously edamame is a vegetable, but what you may not have realized is that it is a type of soybean. I actually grew up across the road from a field filled with soybeans, but it wasn’t until the last couple of years that I heard about edamame.
Since it’s a vegetable, edamame is generally high in protein and very nutritious.
Edamame has become one of my personal favorite foods. I find that it’s great to eat as an appetizer or as a mid-day snack to get an extra boost of protein. It takes less than ten minutes to steam a batch, add a touch of sea salt and be able to enjoy them.
If you can’t find fresh edamame, try looking in the freezer section!
