I haven&#8217;t had a chance to try it yet, but it is definitely on my list. It seems easy to make and its healthy and light for the summer months.<\/p>\n<p>Here are the ingredients to peak your interest and then you can head over to the Food Network site and get the full recipe and instructions.<\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>2 ounces thinly sliced prosciutto<\/li>\n<li>1 pound asparagus, trimmed<\/li>\n<li>2 teaspoons extra-virgin olive oil, plus 2 tablespoons<\/li>\n<li>Kosher salt and freshly ground black pepper<\/li>\n<li>2 tablespoons fresh lemon juice<\/li>\n<li>1\/4 small melon (about 12 ounces), peeled, seeded and cut into 3\/4-inch cubes<\/li>\n<li>4 ounces fresh mozzarella or burrata cheese, cut into 3\/4-inch cubes<\/li>\n<li>2 tablespoons pine nuts, toasted* see Cook&#8217;s Note<\/li>\n<\/ul>\n<p><em><a title=\"free health and fitness tips\" href=\"http:\/\/www.withamymac.com\">WithAmyMac.com<\/a><\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;m always looking for great, fun and easy summer dishes to serve or take to cookouts and bbqs. \u00a0Plus, I like doing something a little bit out of the ordinary that makes me seem like a better cook than I really am!
