Delicious Low Carb Pizzas
I found this low carb cauliflower pizza crust recipe on HaveYourCakeandEatIt.com and was inspired! We’ve been doing the 4 Hour Body diet and this recipe would fit into the diet and maybe even give me the feeling of eating pizza – how could I NOT try it?!
We made a few changes to the recipe and probably made it a little less healthy but it was delicious and still low carb so I called it a WIN!
Ingredients:
- Head of cauliflower, cooked, minced
- 1/2 can of pizza sauce (low sugar!!)
- Shredded cheese ~3/4 cup
- Egg
- Pepperoni
- Parsley, Oregano, Sea Salt, Basil
- 1/4 cup grated carrot
How to prep cauliflower:
1. Using a food processor, process fresh cauliflower until it is the size of rice grains, either using the plain steel blade or the shredder blade.
2. Microwave it in a covered dish for 8-10 minutes. Don’t add water- just let the moisture in the cauliflower do the work.
Directions:
1. Pre heat oven to 450.
2. Spray a cookie sheet with 1-calorie non stick spray.
3. Mix the cauliflower, egg, carrot (opt.) and cheese.
4. Press into pan in a round shape. (I made 2 mini pizzas because I found they held together better.)
5. Sprinkle on the herbs.
6. Bake 12- 15 minutes.
7. Remove from oven add sauce and toppings.
8. Bake until cheese melts.
We tried doubling the recipe, making the pizza bigger, making them smaller and the mini pizzas were the winner. They held together better and were easier to get off the pan.
I’m not going to put a nutrition count on this because depending on your toppings, cheese, sauce and size of pizza, it will vary. Look at your labels and assemble responsibly!!
The only thing I really wanted out of this recipe was a low carb, pizza-esque meal and it delivered! As a matter of fact, I think we’ll have it again tonight!
