It’s not often that you can purchase one vegetable and get two different properties from it like you can with beets. Although this is one of the great selling features of the beet, it doesn’t seem to be flying off of the produce bin.
Beets are the bulb or root of the plant and are usually a shade of red or purple. They’re generally pretty high in sugar, so you should get a nice, sweet taste. Beets are also low in calories (approximately 75 calories per one cup serving), so they won’t adversely affect your overall diet. Plus, for every one cup worth of beets, you’ll get 1/3 of your daily need for folate, and a good serving of fiber and Vitamin C.
So, what’s the other property associated with beets? When you purchase them fresh, they’re usually attached to a green, leafy plant. Those greens are similar to Swiss chard and can be eaten as well.
